Chef Will Gilson

  • At age 17, Gilson was the chef at his father's farm restaurant, Herb Lyceum.
  • From 2006 to 2010, Chef Gilson was the executive chef and proprietor of Boston's Garden at The Cellar.
  • His newest venture is EAT, a pop-up restaurant he operates with business partner Aaron Cohen.

• Tomato Philosophy •

Chef Gilson's favorite use of canned tomatoes is for "hearty, slow cooked dishes, like soups, pasta sauces, and even jam to serve with cured meats."
